sake, kombu (or water)2 tbsp rice vinegar1/4 cup rice vinegar, or to taste2 tbsp mirin, or soy sauce1/3 cup rice, or chicken stock1 cup shiitake mushrooms, cut into 1 inch slices1/8 tsp.
sugar, or as needed1/16 tsp.
soy sauceFor the sauce, combine rice, sake, and mirin in a small bowl.
Add the shiitsake mushrooms and stir to combine.
Add in the rice vinegar and stir until thoroughly combined.
Stir in the soy sauce.
Season to taste.
Serve over rice, with a rice or noodle bowl.
